1, The raw material
Shanxi Mature Vinegar is made by using sorghum, bran as the main material and rice husk, chaff as the auxiliary material. As a high-quality vinegar, it contains rich minerals, amino acids and reducing sugars etc, which benefit people's health.
2, Yeast seed and dosage
Shanxi Mature Vinegar is using Daqu to be the saccharifying ferment starter, which is made by barley and peas. And it is made naturally by using the microorganism of the raw material. Especially the qty of yeast, which Shanxi Mature Vinegar used, is up to more than 60%. Almost it uses the yeast to substitute the grain. And peas in Daqu contain rich protein, which can be decomposed to variety of amino acids required in the human body in the process of fermentation.
3, The brewing technique
Shanxi Mature Vinegar inherit the traditional technique "Steaming, Fermenting, Fumigating, Filtering, Aging". Namely, the production technique inherit from Shunzhi years in Qing Dynasty. It is made by using sorghum and bran as the raw material, rice husk and chaff as the auxiliary material, adding the Daqu made from barley and pea. After the alcoholization process, it adopts solid-state acetic fermentation, and then fumigates the solid fermentative substrate of vinegar and age the vinegar. Expose the vinegar in the sun in the hot summer, get the ice out of the vinegar in the cold winter, age the vinegar for a long time. This technology is honored as China Intangible Cultural Heritage.
4, Flavor
This product looks clear and dark amber, coordinating fragrance, tastes sour mild and the tasted fragranace last longer. It has the unique flavoring features: "sour, mild, sweet, fragrant, fresh".
5, Components
